In Lexington, North Carolina, barbecue eaters don’t squirt sauce, they dip. At the Barbecue Center, as elsewhere around here, it’s a simple seasoning done right: vinegar-heavy, with ketchup, sugar, salt, and pepper.

Lexington, North Carolina, is to barbecue what Paris, France, is to baguettes. When I was a kid, I imagined everyone in Paris walking around with a baguette or two under their arms, like Little League baseball bats in thin paper sacks.
If you have ever encountered a chamber of commerce brochure for Lexington North Carolina, advertising for the Barbecue Festival, a Southern Living magazine type expose on North Carolina barbecue, or a web site devoted to telling you all about Piedmont pork, you have undoubtedly seen something approaching the first photograph above.
